Zucchini Corn Medley

A few Saturdays ago my daughter and I went to the farmers market by our house and bought a variety of veggies.  Our plan was to make something outside of the box.  I let her pick out whatever she wanted to try.  It was fun to see what caught her eye.

We brought our mix of veggies over to my sister’s house to help us come up with yummy ideas.  Once of the recipes we created came from a mix of zucchini, corn, and garlic – all fresh from the market.

Ingredients

  • 5 cups Zucchini (cubed)
  • 3 ears Corn (remove kernels from cob)
  • 2 cloves Garlic (pressed)
  • Parmesan cheese
  • Olive Oil

Directions

Start by heating up some olive oil in a frying pan.  Once warmed, add zucchini and corn kernels to the pan.  Continue to heat on medium, stirring occasionally.  Using a garlic press, add 2 cloves to the mixture.  After 15 minutes remove from heat.  Let cool then serve.

I have to say – while this was cooking on the stove top it smelt so good!  Together the zucchini, corn, and garlic created a nice fresh flavor.  Even my 5 year old liked it!
