My daughter and I love to bake together. I think it is very important to include her in the kitchen so she can see us bake yummy foods with the fruits and veggies that she helped to grow. Last summer we made loaves and loaves of zucchini bread. This year we decided to mix it up a bit.
Our Haralson Apple tree produced quite a few apples this summer so we chose to add a few into our mix. The bread was still very sweet and fresh. The apples really tamed down the zucchini flavor in the bread.
The recipe is quite easy. We typically make several loaves over a couple weekends so that we can freeze them. Nothing tastes better in the middle of the winter than some fresh bread.

Ingredients:
- 3 Cups All Purpose Flour
- 3 Eggs
- 3 Teaspoons Cinnamon
- 3 Teaspoons Vanilla Extract
- 2 Cups Shredded Zucchini
- 2 1/4 Cups Sugar
- 1 Teaspoon Baking Powder
- 1 Teaspoon Baking Soda
- 1 Teaspoon Salt
- 1 Cup Vegetable Oil
- 1 Cup Shredded Apple
Directions:
Preheat your oven to 325 degrees. Apply some cooking spray or flour to a 8 x 4″ bread pan. In a bowl, mix the flour, baking powder, baking soda, cinnamon and salt together. In a separate bowl, mix together the eggs, vegetable oil, sugar and vanilla extract. Once mixed, combine the two bowls and mix together. Add the shredded zucchini and apples then mix again. Pour half of the mixture into the bread pan. Put in the oven and bake for 50 minutes.

I have my grandmother’s (who just turned 100 this weekend!) zucchini bread recipe which I love. I wouldn’t have throught about adding apples to it. I will have to try that. Thanks for posting on the #WasteLessWednesday Blog Hop. Can’t wait to see what you share this Wednesday!
